Donut Muffins

We could all act surprised that I’m posting another muffin recipe, but let’s be honest, I’m muffin obsessed! I first made these muffins shortly after I got married and they have been a favorite ever since. I wish I could say that all of the recipes I’ve tried over the years have been this much of a success.

These muffins are moist and not overly sweet even with the cinnamon/sugar topping. The cinnamon and nutmeg in these muffins gives them just the right amount of flavor and reminds me of a homemade donut and that’s where they get their name, Donut Muffins.

Delicious even before the topping, but dipping these muffins in the butter and cinnamon/sugar mixture sends them over the top. These muffins are perfect with your morning coffee or a glass of milk. I’m sure that when you make these muffins, you family, coworkers or whoever you decide to share them with will love you forever.

I subbed half of the flour with whole wheat flour and they were still moist and delicious!

Yield: 12 muffins

Ingredients:

Muffins:

1 3/4 cup all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2 teaspoons cinnamon
1/4 cup melted butter
1/2 cup brown sugar
1 large egg
3/4 cup milk
1 teaspoon vanilla

Topping:

1/4 cup melted butter
1/4 cup sugar
1 tablespoon cinnamon

Directions:
  1. Preheat oven to 350 degrees and greased or line a muffin tin.
  2. Combine flour, baking powder, salt, nutmeg and cinnamon in a bowl. In a separate bowl or large liquid measuring cup, whisk the melted butter, sugar, egg, milk, and vanilla together.
  3. Add wet ingredients to dry ingredients and stir to combine.
  4. Spoon batter evenly into muffin tin and bake for 15-20 minutes, until a toothpick inserted in the center of a muffin comes out clean.
  5. While the muffins are baking, melt the butter in a bowl. In a separate bowl, combine the sugar with the cinnamon.
  6. While the muffins are still warm, remove from the pan and dip muffins in butter then into the cinnamon/sugar mixture. Enjoy!
